The "paper available" display in the control panel is an informational display for paper printers, and shows the paper sizes available in the currently loaded paper trays. Win2PDF doesn't have paper trays, and this informational display isn't relevant for a virtual printer.

You can select the default paper size by opening the Printing Preferences window, then clicking the "Advanced" button. You can also select the paper size in the "Page Setup" window in your application if it has one.
